I put this recipe into another Food forum so I'd know how many calories per bar (96kcal). I thought I may as well share with everyone!
Please note this only uses a little honey and the banana for sweetening. You may wish to increase the honey or add some sugar if you prefer it sweeter.
Name of Recipe: Chia Protein Muesli Bars
Number of People: Makes 16 Bars
Ingredients:
170g rolled oats
2 Tbs Flax Seed
2 Tbs Chia Seed
2 scoops protein powder (I used Vanilla, but would work with Chocolate also. If you don't have any powder, I'm sure it would be fine to omit.)
70g mixed dried fruit
2 tablespoons natural-style nut butter
2 large eggs
2 medium banana
1 Tbs honey
1 tsp cinnamon
Preparation:
Heat oven to 180c, spray slice tin.
1: Grind Flax Seed 10 seconds speed 10. Add Chia seed, grind 15 sec speed 10. Transfer to mixing bowl.
2: Add to mixing bowl Oats, Protein Powder, dried fruit and cinnamon, stir to combine
3: To TM bowl add bananas, honey, nut butter, mix until combined speed 5, approx 20 sec, scrape down sides and mix again a few secs if required. Add eggs, mix 10 sec speed 4.
4: Add banana mix to dry ingredients, stir until combined.
5: Spread out in slice tin, use spatula to cut into 16 portions while still wet.
6: Bake 15 min
