Wholewheat pizza dough
« on: September 02, 2013, 05:59:53 pm »
Hi there...I received my TM a couple days ago and have had the usual ups and downs. I had a serious down making wholewheat pizza dough - for the second time. I provided wholewheat flour for the demo I hosted before I bought and even the consultant ended up with a dough disaster. It didn't rise even a bit and was not at all soft or stretchy. For the demo we used 'active' yeast so thinking that might be the problem I then used 'instant' yeast for the one I made today but still no luck. Yes I know ww flour isn't going to be quite the same but this was a brick! Any recipes would be helpful thanks as I just wont make pizza without plain white flour. Thanks!

Many members have had success with the Thin and Crispy Pizza Dough recipe. It says in the original link that you can use whole wheat in the recipe. :)

Welcome to the forum HM, let's hope you can put all the disasters behind you and you start having some success.  Have a look at some of the recipes on this forum, we have reviews which will give you the heads up that a recipe works so it always pays to check here first.  Even if you are using the TMX cookbooks, check out our recipe review thread where you will find all current books are listed.

You may like to look on Quirky Cooking. Jo has a lovely pizza base here. This is quite tasty, I'm not sure if it will help you though.

Hi HM. Welcome to the Forum.
Not sure if this will help, but I use wholemeal spelt flour (bought in bulk) in the EDC recipe for pizza dough. I just add a little extra water (probably only a couple of teaspoons) until the dough looks right. Then I follow the recipe and roll the dough to fit two trays each about 40 cm by 35 cm (so the dough is quite thin). Works well and always scoffed in this house ;D
Keep experimenting. The results are worth it :)

Thanks everyone...I've been so busy with work and back to school with the kids that I am only getting to these now. My DS has an urgent request for pizza with his little buddy sleeping over this weekend so wanted to test some dough!
