Chickpea Flour Farinata with Herbs (with photo)

Hi everyone

It's been a long long while... I missed being around you guys.
I've been pretty busy this summer.
One of my cousins who lives in Sweden came to visit us for over 10 days. Then my Thermie got broken. (all fixed now thankfully). Our some very close friends from Istanbul came to visit us for like 9 days. Soon after that we went to mountain (a small town called as Pejo in north Italy) for a week. And after that we went to Istanbul for two weeks.

Once my routine is interrupted it takes me a while to arrange things back as they were before. I am hoping to be more available next days..

Ingredients:
5 g parsley (leaves only)
2 sprigs of thyme (leaves only)
2 sage leaves
10g onion
150g chickpea flour
500g water
40g extra virgin olive oil
Salt
Pepper


Preparation:

    Place herbs in TM Bowl. Chop for 7 seconds on Speed 6-7.

    Add onion and chop for 2 seconds on Speed 6-7.

    Add chickpea flour, water, salt and pepper. Blend for 20 seconds on Speed 4-5.

    Cover a tin (of 30 cm diameter) with baking paper. Brush it with oil.
    Pour flour mixture into the tin. Dress with the remaining olive oil.

    Bake for around 35 minutes in preheated oven at 220°C.

    Slice and serve.


Enjoy.


If you have leftovers you can simply warm them in a frying pan and then serve. We did so the day after and enjoyed them very much.

Lovely to have you back after your busy summer Farfallina :-* :-* So glad your TM is fixed and you are back posting recipes ;D
Must try this recipe as my DH loves bread (and potatoes) :D :D

This was fantastic timing for me because I bought a bag of besan flour last night and can't remember what recipe I needed it for.  I've been frantically scanning my recipe books in the last 24 hours because my 18 year old has just decided that he wants to try being a vegetarian for a while.  This is a major change for him who has always been a massive carnivore and normally distains vegetables.  ARGH!!!!!!

I'll be trying this tonight for him.

Thank you for that....it gives me another recipe to try.  At the moment I'm not too fond of the males in my family.....they are going to be starving to death if they don't stop bitching about what I'm cooking for them and start helping.  The performance from the eldest male of the family when he found out there was no meat for dinner was quite pathetic.  I'm seriously considering only cooking boiled brussel sprouts for him tomorrow. :P

Farfallina I have just looked at your photos, they are wonderful. Your holiday looks so very interesting. Welcome back.
I have never used chick pea flour. What would you eat this with please?
May all dairy items in your fridge be of questionable vintage.

It is nice to be back.

I'll try to reply all the questions ;)

When I bake this, I eat it instead of bread. I should note though that the texture is different from bread.

Just to give you an example let me tell you what I had at supper yesterday.
Another bread substitute recipe for me is baked mucver.
I had chicken kebab and served it with some salad and baked mucver. In this menu also chickpea farinata would work fine instead of mucver.
I sometimes spread some olive pate or soft cheese over the slices.

10g onion is not much as you said. You can increase it as you wish. At the time I made it the onion I got was very strong and I didn't want much onion taste. 10g worked fine for my taste.

stacelee, if you still have chickpea flour and don't know what to do, you can try also this interesting recipe: french fries without potato :)

By the way chickpea fritters recipe sounds wonderful! Thank you for the link. I definitely will be trying it very soon!

About the photos in my blog.. They are a bit outdated as they are from the end of March. Yes, it was an amazing place.
I may be sharing new pictures from Pejo in my next posts.
