problem is that if you stuff up early on there's no point in recording the rest of the recipe as it might not work with changes IYKWIM lol

Necessity is the mother of invention though and I seem to have that down pat after all these years! (ie if it doesn't work out the way you originally hoped... call it something else and pretend that's what you were doing anyhow! ;))

Seat of the pants is the only way I know. I made yoghurt curry last night it turned out really well but I will have to make it again before I can post the recipe because I kept adding time to the cooking of the onions I lost track.

I'm another 'seat of your pants'er  ;D  And all too often I forget to write down all of what I did!!!!  :o 

Although the first few conversions I did involved reading recipes which were similar in the TMX books, and then trying that out for my recipe.  So can I pretend that I'm organised and think things through in advance?  ;)

I usually look through the EDC and find something a little similar (eg: if converting a meat recipe, I find a meat recipe to see an example of how to cook it), I then fly by the seat of my pants but record AS I am doing it (not before or after cooking).

Then, at the end, I jot down changes I would make next time to perfect it   ;D
