I really like these. Once again they are not too sweet. They must be pressed into the tin very firmly otherwise they will be crumbly.
5/5. Definitely to be made again and again.

Loved them here too Cookie....and it really was quick to whip up

I pressed mix into these bug silicone moulds that I picked up from the reject shop
The next time I make them, I will Pre-chop the pepitas & pistachios first, then set aside....but that's just a personal preference to have them not so chunky.

I have made these a couple of times now and we really like them. While they have lots of healthy ingredients, I know they would still have heaps of MJ, but I do find them quite filling so one or two make a satisfying after school snack (for the teacher!)

I think the teachers need the snack more than the children. I was always ravenous when I got home from school. You could always eat these on the way home.

Too true. I remember when DD was young and I worked part time at her school. When I dropped her I would just do.......... and then when I picked her up I would go early and just do something else. I always had to turn up presentable in the mornings when I dropped her as I was often grabbed for relief work. She came home quite upset one day as the Principal had gone into her class and asked her 'where her Mum was' as he couldn't get me on the phone.

The principal at my daughters' school is pretty adamant that parents shouldn't apply to work there. I do feel grotty sometimes and think I'm not presenting myself very professionally if I ever hope to get a teaching job, but then I think it's not that big a deal since I won't be working there anyway.
My girls hate the idea of muesli bars, otherwise I could have come up with so many variations (nut free of course) for their lunchboxes. When I do get a job though, I should organise stuff like this so I can grab it and go.
