Well that was the tastiest bowl of crunchy almonds I have ever tasted
Always looking to reduce calories & costs in dishes, I used Carnation Coconut Milk instead of coconut cream and my home made vanilla extract instead of vanilla paste then followed the recipe. It was quite runny to start with but I let it sit in my cereal bowl whilst I cleaned the TM bowl and it had thickened a little more by the time I was ready to eat it. This made 2 bowls of porridge and was certainly sweet enough for me. I might even reduce the maple syrup a little next time too. Served with blueberries, I took a while to get used to eating crunchy almonds and wondered if I should have ground them a little more but I soon got used to it and it was delicious. I still might grind them for an extra second next time though as it took me quite a while to eat my breakfast this morning
