Dark Chocolate, Pomegranate and Ginger Bark (gift giving!)

This is NOT a TMX recipe, so Moderators, please move it if you  think it is best found in the non tmx recipe section.  . . .

I was just having a quick look in the food section of the New York Times and saw this.

In the Northern Hemisphere, pomegranates are usually in season from around September to February. In the Southern Hemisphere, it around March to May. - So, if those Antipodeans among us wanted to make this for a Christmas treat, we might have to think up a substitute for the pomegranate seeds - although I can't think of anything that would compare colour wise!!  Does anyone have any ideas . . . .? ;D

GF Tenina makes something like this and if you look at the front of her new book she obviously has another recipe in that as well.  You could substitute chopped up dried cherries or cranberries in place of the pomegranate and use Tenina's method to make it in the Thermomix.  I love her caramelized white chocolate bark recipe which uses pistachios and craisins.

I love that too Judy. It has such an amazing flavour.

GF I am sure I saw a Pomegranite at the shops the other day. I don't think I was dreaming.  :-\
May all dairy items in your fridge be of questionable vintage.

I bought a pomegranate yesterday. I've never bought one before and had no idea if they were in season or not.

I have two pomegranate shrubs. They are starting to flower and the flowers are turning into the fruits (you can see the bulb on the end) I suspect that they might be ready in february/march, but this is our first year in this house so we have to wait and see. Either way I think it is probably a little out of season in cool climate regions of Australia....don't know about up north though.

Can buy Pomygranates in Woolies at the moment.  To get the seeds out without too much fuss,  cut each end off and then with fingers pull apart .  I use these in my Spicy Barley Salad and the color was lovely .

Thanks for that, Judy - I guess this tip would therefore make it (partly at least) a TMX recipe ;) ;D

Does anyone know roughly the quantity of seeds in a pmegranate? I've got one at home that I need to use and was thinking of making this recipe but it asks for 1 cup of seeds so thinking I'll need to purchase a few more.

Just use what you  winder it really won't matter much. You could add most anything to this recipe including nuts. Also you can use the  *: dor chopping the ginger and melting the chocolate.

I am gunna  throw all this together.



The only thing I measured is the chocolate and only because it says 200 gms on the label.

We will see what happens.

I was soooooo tempted to add some chilli flakes on top but stuck with the salt shaker as I had no flakes.

That looks great gert and love the ingredients you used. I have some pistachios so will use those plus the pomegranate and ginger.

How many pomegranates did you use?
