The old fashioned traditional 2,4,6 ounces - Sugar, butter, flour.
Can substitute one ounce of flour for ground rice for crunchier mix or cornflour for smoother softer one.

Two methods
Either blitz flour and butter to breadcrumbs then add sugar and press into tin or cream butter and sug and add flour  :: then put in tin.
Both work.  ;D

I played around with different shortbreads last Christmas, and in the end my favourite (and easiest to handle) was the red and green shortbread from the Festive Flavours booklet.  I dont always use the cranberries and pistachios, but use that recipe as a base and add whatever else I want.  Last year I added powdered lemon myrtle to make lemon myrtle shortbread, and they were very nice too.

I like the one from the Festive book, in fact made a batch today. There is a nice one that you melt the butter in one of the WW books too. I've had a quick look on it and couldn't lay my hands on it. I have so many books in front of it. I can have a better look if you wish, I don't mind.

I think the WW one is called melt and mix shortbread cookie. I think it's the one mum has been making for years. Very nice and easy.
My favourite is a good taste recipe for shortbread stars. Make them every Christmas.
