Bought some carob syrup from the farmers market this morning. Made this recipe and added 50g carob syrup in step one with the vanilla bean paste. A very delicious ice-cream! The carob flavour was quite subtle, and you could increase it a bit, but that would make it sweeter. You could also make a subtle carob ice-cream as the base, and then swirl through some carob syrup to "marble" it through the ice-cream.
