Flour and Duck Fat Tortillas - KIS Page 29

Made these to go with pulled pork and salad for dinner tonight. I didn't have duck fat so used evoo and cooked them in the pizza oven. They turned out just great and are not too thick. Will make again.

Some are soft, some are crisp. It depends on how hot the pizza oven was and how long I cooked them for. Mainly soft.

I made these tonight and I used duck fat as we had some in the fridge. I cooked them in a hot dry frypan on the stove.

The dough was very easy to work with. They are probably the nicest tortillas I have made. Delicious!

Chicken thinga with potato (from KIS) and salad. It was lovely.
I still have to do the review for the chicken tinga.

I must try these.

I dont have duck fat & we dont eat duck, an animal thing. 8)

I am wondering whether olive oil which kimmy used or ghee would be better. I am not sure but i think duck fat is solid like ghee. Suggestions?

Hally I think it's all down to taste. I've never tasted ghee that I know of, but if it's more tasty than olive oil, I would try it.
