Haggis Aussie Style

Name of Recipe:

Haggis with tatties and neeps.

Could serve 4 and more depending on size of haggis.

Buy an authentic Haggis at www.pacdon.com.au or make your own from the following ingredients

Lambs pluck
Onion
Suet
Rolled oats
Sheep bung
Salt
Pepper
Cayenne pepper

What I did.

Because I wanted this for New Years Eve and unsure of my condition at dinner time I started in the morning by making mashed tatties in the Thermomix using recipe from EDC. ( actually I already had some cooked potatoes so I chucked them in the Thermomix with Teninia's confit garlic from KIS, lots of butter and cream leaving the skins on.)

As I was unable to find any neeps in Far North Queensland at the is time of year which is  really not such a bad thing but wanting a similiar colour for authenticity I cooked some carrots and baby parsnips in the basket of the Thermomix. When cooked I dumped them back in the bowl with more butter than you need to know and a bit of salt and pepper. Mash as for mash.

Now they are both in separate dishes to heat in Microwave.

Now for the Haggis. As it comes in a suitable sous vide bag that is the go and the Thermomix is the way to do it.

Put two litres of water in the bowl. Heat to 60 degrees ...10 minutes on speed 2. This is a wee bit too hot for a normal sous vide but when you place the haggis in the basket it will lower the temperature somewhat. Now reset the temperature to 50 degrees/speed 2 and cook for 70 minutes for. 350 gm Haggis . It is already cooked so you just have to reheat it without bursting the sheeps bung.

If you buy a frozen Haggis make sure it is thoroughly defrosted  before cooking.

Normally this a a meal for Rabbie  Burns night but certainly can be enjoyed at Hogmanay as well. Reciting the Ode to the Haggis with a wee dram is a must.  http://www.robertburns.org.uk/Assets/Poems_Songs/toahaggis.htm

Better wait to see how it goes I think.  Can't possibly eat it until after dark as it is so not here. Might cook it and then take it to the pool to eat while sitting in the water

Opened the whiskey just to have a sniff. Had to buy special whiskey glasses before I would let DH open it. He has been waiting a few years now for this particular bottle. The glasses just arrived Christmas Eve, LOL!

When we  finish  that one I will open the very extra special Sullivans Coveor maybe I should open that one too as this haggis is Aussie style

Oh dear. Wot to do. Meanwhile I will have a glass of bubbles to cool while watching The tennis.

If it was me I would choose the Sullivan cove, make it a Aussie haggis.
My first taste of haggis and I loved it  was in Scotland and was piped in. Haven't had any since.
I child-proofed my house, but they still get in!

DH loves Islay whiskey, but says Sullivan's Cove is more like a rye whiskey so you have both types to choose from.

Oooo interesting ceilidh. I would say the Sullivan's Cove is nothing like a rye but it is all about your personal taste. It is definitely made with barley with the mash coming from the Cascade brewery.

The Bruichladdich is also made from barley.

American rye is made with rye and sometimes corn or a combo of both and tends to be a bit sweet for my palate.

 I like both but a true single malt whiskey is all about the maker and his ego eh? I wish I could afford to drink a wee dram more often but sadly it is a special treat. The Sullivan's cove is more than double the price of the Bruichladdich so this may be our one and only bottle ever. Hopefully it will last a very long time. I will have to chain it down and keep it from DH nocturnal wanderings. LOL'

I'm not a whiskey person at all. It tastes like medicine to me. I've never tasted real haggis. Not so sure about the ingredients Gert has listed either.

I was hungry so turned to air con up full bore and cooked the haggis.

Absolutely gob smacking delicious. Chookie you would love this more than black puddin'.

I will will be cooking it again . DH is in heaven as there is some left for breakfast.

I so wish I'd had an opportunity earlier in my life to have this special treat
