Name of Recipe: Chinese Chicken and Corn SoupNumber of People: 4 massive bowls
Ingredients:1 kg chicken drum sticks- about 4-5
1 piece of ginger- sliced up.
1 whole peeled onion
1 tsp salt
2 tsp sugar
1 can creamed corn
3 tb corn starch mixed with 3 tb water
2 eggs lightly whisked
Preparation:Place chicken drum sticks in the thermomix blades. Top up with enough water to cover the chicken.
Add onion, ginger, salt and sugar.
at speed stir/speed 1 on Varoma for 30 mins.
Removed drum sticks and allow to cool.
Strain the broth to remove the onion and ginger.
When drumsticks are cool to touch- take the meat off the bones and put in thermomix. Chop for 3 seconds on speed 4.
Add can of creamed corn then add back broth until it reaches slightly below the max mark.
, speed 3 on Varamo for 5 mins.
With 2 mins to go- pour in corn starch mixture slowly followd by whisked eggs.
Top with slices of spring onion if desired.
