I didn't want to let Gayle's recipe for her Jam Muffin recipe to get lost in postings.So have posted it here

"This is an old recipe that I make when the cupboard is bare. It's quick and easy and the muffins are good for lunch boxes. They freeze well too. This is the original recipe. (Don't know where the recipe is from). Makes 12 muffins"
Jam muffins
1/2 C jam
2 eggs
1/2 C raw sugar
1 C sour cream or yoghurt
60 g melted butter
1/2 C coconut
1 1/2 C SR flour
Preheat oven to 180 C
Whisk eggs and sugar until frothy
Stir through sour cream and butter and mix well
Fold in coconut and flour
Half fill muffin pans with mix, put in 1 teaspoon of jam in each, then cover with remaining mix
Bake 15 to 20 mins until golden brown.

Made these again today and used my pumpkin jam and some home made strawberry jam I found in the back of the pantry dated 2008. It was a little dark but still tasted ok

I just decided to give these a go since our baking tins are empty again.
1/2 C jam
2 eggs
100g raw sugar
180g sour cream (was probably a bit less than a cup, but was what I had)
60 g melted butter
45g dessicated coconut
220g SR flour
I think my daughter will love these!
It also reminds me that I used to make chocolate muffins with either a spoon of jam or a spoon of cream cheese (for a cheesecake muffin) in the centre.

Oh dear - looks like we all have some old jam to use up. I have two jars in my fridge which have crystalised so this will fit the bill nicely. Will make a large batch and freeze for later.

Wow, was about to use Eatyourbooks to find a recipe to use up some sour cream before we go to Tassie. I will leave these in the the freezer for family when they visit while away. Thanks a million.
