Review Yuzu Curd ITM2 page 162

Having been given a small bottle of Yuzu, I thought I'd make the curd which is only one part of a recipe for Yuzu & Blackberry Layered Dessert pge 161.  There are 5 components to this recipe - Mascarpone, Blackberry Jelly, Yuzu Curd, Orange Gel and Walnut Crumble which is a 3 day project making these components before the final assembly.  

Will review the curd tomorrow after it sets in the fridge overnight but you can use lime juice in lieu of Yuzu juice which is an extremely tart Japanese citrus fruit.

I'd love to make the whole dessert but I would need a special occasion and 5 other people to share it. The second picture is from the book, hope it's OK to post that but I really wanted you to see how good it looks.

Me either.  Did the butter taste nice Judy?  The dessert looks lovely and would look spectacular for a special occasion.  :)

Yes I had it on toast for breakfast just to try it Julie, beautiful consistency.  It's made differently to other curd recipes in that the cubes of cold butter are added right at the end, heat off 2 mins/speed 2.

I have never heard of Yuzu before Judy.  Is the juice easy to come by?  Must say I love the look of the finished dessert.

It's available in Japanese grocery stores Trudy, there's one called  Little Tokyo, Shop 2A Central Market Arcade in Adelaide.  You can substitute lime juice if you want but I've read it described as multiple layers of flavour, including orange, lemon, and tangerine so I guess it is a little more complex than plain lime juice and worth seeking out.

When DD was in Japan she came home raving about Yuzu. I think this book is almost a must as there seems to be lot to make in it. Judy that looks lovely and would be different to lemon for a change.
May all dairy items in your fridge be of questionable vintage.
