SUMMER BURGERSIngredients
220gms onions
100gms carrot
2 cloves garlic
1 tsp oil
1 tsp dried oregano
230gms mushrooms
40gms tamari or soy sauce
1/2 cup besan flour (sorry forgot to weigh it)
1 tsp salt
1 tlbsp nutritional yeast flakes
oil for frying
Method
* Add onions, carrot and garlic to
chop sp 7 for 10 seconds
* Add mushrooms and chop sp 7 for a further 10 seconds or until all vegies are finely diced
* Add oil if using and fry off vegies for 5 mins on varoma temp - allow to cool for 5 mins
* Add the other ingredients to the onion mixture and combine
sp 4 for about 30 seconds
* Shape into burger patties and fry for 5 mins each side or until firm and golden brown.

* I didn't add oil to the vegies, just sweat down and drained the water off them.
* I needed to add an extra 1/4 cup of besan flour as the mixture was a bit moist - possibly due to sweating off vegies in TMX.
* I used soy sauce.
* As I had no nutritional yeast flakes I substituted it for 2 tlbsp of umami paste as apparently it has a similar flavour.
The mixture made 2 over sized burger patties and 5 regular sized. The recipe states it makes 5.
Hally: Looks good what is besan flour?
Katiej: I'm pretty sure besan flour is chickpea flour.
Where do you buy the nutritional yeast flakes? Can you just leave them out?
Michele: Besan flour is just chickpeas (dried) buy them in any supermarket and grind in the TMX (it is very noisy - worse than ice).
Nutritional yeast flakes you can buy from health food stores - I used umami paste as a substitute. I'm sure concentrated vegie stock would fit the bill too and reduce the added salt.
GF:Thanks, Mich! Made these tonight but as it was only for me I tried "quartering" the recipe. A bit of "guesstimation"... !!! Didn't have yeast flakes so I used veg stock concentrate ... Just lovely! Next time I'll add a little more of the flour.
Have you tried freezing these, Mich?
Michele: No GF, I haven't tried freezing - but I will this week as I want to serve these for the vego's at our BBQ on Sunday. I can't see why they wouldn't freeze well? I'm going to use a little less soy sauce in the next batch and I bought some nutritional yeast flakes from the health food store today to try out.
Cookie: We had these last night. The flavour was lovely, although I would use a tiny bet less soy next time too. My mixture was quite sloppy and I think I should have added the extra flour too.
Michele: How many patties did you get out of the mixture?
Cookie:I think about 6. I had a couple left so I am going to spread them thickly over a teeny beef roast I have and cover it in pastry for tonight's dinner.
Hally: Just made the mixture, used 1/2 cup flour & then added more. Leaving to roll later.
Made 3 good size burgers. I then Rolled balls in panko breadrcrumbs & tossed in pan. Delicious
Yes they worked well. Then the burgers I melted mozarella over them
DM: Made this in the middle of winter for picnic. Subs nutritional yeast with pecorino cheese, add some Ozemite for flavor and need extra about a cup of panko breadcrumb, first batch without breadcrumb is too sloppy.
