Review Mango & Coconut ice-cream from Clevercook eBook

I made this on the spur of the moment using frozen mango but didn't have any frozen coconut milk.  I used liquid coconut milk and the mixture beat up rather thickly so I didn't even use my ice-cream maker, just froze it overnight.

It is more like a mango sorbet than ice-cream to me but on a hot day, it will go down very well.  I used a tad less sugar (80g) and it's sweet enough for me as my mangoes were very ripe when I froze them.

Judy have never heard of Cleaver Cook EBook.  Who is it by ect?
