Chickpea Choc Chip Cookies

I adapted this from a Jessica Seinfeld recipe as seen on an Aussie blog called "Not Quite Nigella".  The kids will never spot them so, if your kids are fussy (like mine), I just wouldn't tell them!!  I also think that this would work just as well with white beans as a substitute.  Perhaps not a 'health food', but a step in the right direction!

Chickpea Choc Chip cookies

1 cup firmly packed brown sugar - 190g
3/4 cup butter - 180g
1 egg
2 tsp vanilla extract (not imitation vanilla)
400gm can chickpeas
2 cups choc chip - 320g
2 cups plain flour - 250g
1/2 cup rolled oats - 60g
1 tsp baking soda (bi-carb)
1/4 tsp salt

Cream butter and sugar very well.  Speed 5, 45 seconds, stopping 2-3 times to scrape down bowl.
Add egg and vanilla, speed 4, 10 seconds, scrape again.
Add chickpeas speed 5, 20 seconds.
Add flour, oats, bicarb, salt, speed 5, 20 seconds.
Add choc chips, Reverse speed 3, 15 seconds.

Drop in spoonfuls on baking sheet, bake 180C for 12 minutes.

Dough suitable to freeze.

Chelsea - We made these biscuits this morning and they are very yummy.  The speeds and times are perfect - thanks Amanda.
We really like these on the day that they are baked but I find they go really soft and not quite so appealing on the following days.  It's a shame because they make a large amount.

Meagan - Chelsea I leave mine in a warm oven to dry out until it has cooled totally that makes them quite crunchy for days afterwards.

VHJ - Mine came out a little soft so the next day while I was baking cakes I just popped the biscuits back in the oven for a while and they were perfect.

JD - These are really nice, made 3 dozen or thereabouts - GD has eaten so many I'm not too sure how many there were there to start with. I cooked rounded dessertspoonsful for 15-20 minutes, keeping an eye on them until they looked just right for nice  crunchy cookies - just how I like them. Thanks Amanda, good one.

Gralke - I made these today - nice cookies and one cannot taste the chickpea!

CP - I did reveal that these were good for you (apart from the el choco) and DS wants me to make them again. Thumbs up!

rhogue -  made them this morning - how quick and easy.  I didn't have any chocolate chips, so just broke a small block of organic dark chocolate into chunks, popped in TM on 5 til the were smallish. I always use a round tablespoon measure when making biscuits, that way they are uniform in size and often shape. I also double baked mine to make them crunchy. Great recipe! Thanks.

cathy79 - Yummy, no one will know what's in them. I ground my chocolate instead of chocolate chips, pretty chunky but powdery too so distributes the chocolate nicely.  I guess that chickpea flour (besan flour) could be used instead of the tin too as I've got that in the cupboard too.  Will try next time.

KerrynN - Just made these and they are yummo! I am not sure why you would think to put the chickpeas in but glad someone did! They are really good!

JenniCB - Thanks Amanda for posting this....these are really yummy!! The kids love them! Thanks also to Chelsea for the conversion for us "tippers and pourers". The chickpeas make them quite a satisfying and filling for a cookie too.

Kym -  I've just made a batch of these and the girls love them.  I actually used coconut palm sugar so they turned out a more golden brown type of colour.  I'll resort to anything to hide a few extra goodies in their food as it's health by stealth here.

faffa 70 - These are my kids favourites at the moment. I have been adding the choc chips with the flour and letting them chop a little when I mix it all in. They seem to be liking the tiny choc chips spread more evenly through the biscuit than the regular chips. Happy to do that.

dede - they are great. I have been meaning to make these for awhile but the kids are usually hanging around wanting to see what I'm cooking and the minute I mention trying this they would turn their nose up. So today I got the opportunity to make them with no little eyes watching me. And they love them. Do I tell them what they are ? Or just keep it to myself?  Thanks for the great recipe.

Snoozie -  DH was scoffing into the batter saying it was nice.  I smiled and said nothing. He's had a couple of cookies now and I asked him if he wanted to know what was in them. He said he didn't care as long as it wasn't zucchini. I laughed myself silly and confessed to the chickpeas. I ground about 70gr of organic dark chocolate down to near powder and added a dessertspoon of cacao as I didn't have enough chocolate.  Tastes really nice.

Jo and Co - when I went to get the chickpeas out of the cupboard there was none in there so I used a can of five bean mix and they are yummy. All the kids have eaten them eagerly and have no idea what they are eating. Will definitely be making them again soon.

LeeJ -  subbed a few things to make them dairy/egg free and almost failsafe. So used nuttelex, egg replacer (need to add another couple of tablespoons of water, as the mix isn't wet enough) and grated up some dairy free choc (so amines), used about 150gms, was going to add some cocoa but it didn't really need it.
Made about half the batch, have rolled the rest into a log and popped it into the freezer.
Ds woofed them down like he hadn't eaten in a century and dh even said they were 'not bad', which is pretty good considering he likes his stuff 'normal'.

Nay-nay - Def keeping these ingredients to myself. I used a tin of butter beans. Question: is the mix suppose to go into a bickie dough that you can handle or is it suppose to be a little more 'sloppy' mix that spoons out?? Leaving them in till the oven cools is a good tip - thanks - they crisped up too.
These would be great study food for teenagers - comfort food with protein for their brains.

faffa 70 - spoon out Nay-nay. I use a miniature ice cream scoop for all my bikkies, dough and also spoonable ones.

djinni737 - The DTs (darling teens) love these but DH won't eat them ever since he saw me putting chick peas in the mix.

Moo2 - I made these and the kids are wolfing them down. They couldn't believe there are chickpeas in them. Thanks for posting such a yummy recipe. It's a keeper!

Amy - I made these today and didn't tell mum and SD that there are chickpeas in them! They loved them. These were so easy to make and I found the mixture very easy to handle. Thanks for a great recipe Amanda!

nameisserene - Didn't have any chickpeas so used a can of white beans instead. Still yummy but not crunchy.

JuliaC83 - they are a big hit . The batch made 40 dessert spoon size balls. They barely spread when baking so I placed 12 on a baking tray and lightly pressed them down. I also sprinkled in some LSA mix for some extra nutrition. Yummo! Definitely be making again. I followed the recipe exactly then rolled them into balls and pressed down lightly. I used tinned chickpeas with fluid drained, not dry chickpeas and the dough was very easy to handle.

kyton - kids loved them warm so will be interesting to see how they go cold. I puréed the chickpeas and oats until smooth then set aside. Also used white chocolate, milk chocolate and caramel bits which turned out lovely.

ES - I made these with a 180g packet of Cadbury mini drops. The kids gave them the thumbs up but DD guessed that there was a secret ingredient in them (she knows me well). However, she guessed zucchini instead of chick peas.

These are great, really!
My 18 year old - who is as fussy as a 3 year old and exhibits similar behaviour - asked me 'what had I done to the cookies' in a very suspicious tone.  I said that I had added some oatmeal which seemed to be enough to get her to eat them.

Sound good.  Reminds me that I need to make cecina - a chicpea bread - bit like a pizza/tortilla made of chickpeas.

Funny story about Not Quite Nigella's blog.

Pinyata replied to the post in the crumpet thread and Miss_Shellie replied to the pictures.  Next morning NQN posted about crumpets http://www.notquitenigella.com/2008/07/15/ahhhh-crumpets/ and I sent a comment to NQN,  then mysteriously, the posts on the Vogue Forum disappeared and then OHHHH WOW -NQN has posted about homemade crumpets !!!!! http://forums.vogue.com.au/showthread.php?t=106090&highlight=crumpet&page=9.

Funny thing is they never removed Miss_Shellie's post saying how lovely the crumpets look !!!!

So, moral of the story - don't try to upstage NQN and other senior forum members.  Keep a low profile.

After that they also completely removed a thread on Thermomix from the Vogue forum that had about 2 pages of replies.  

They obviously don't like Thermomix !!  :o :o

If anyone else is a "tipper or pourer" like me here are the conversions I did this morning:
190g brown sugar
180g butter
320g choc chips (I just used 200g though and they were great)
250g plain flour
60g rolled oats

There are some more of Jessica Seinfeld's recipes on the Oprah website (in the food section) if anyone is interested.  I don't think they would convert as nicely as this one though as you would need to make purees first.  Anyway the recipes include brownies (with carrot and spinach) blueberry oatmeal bars (with spinach) and ginger cookies (with pumpkin).
