Mia, just debone the chicken and put it in the bowl I probably wouldn't go much higher than speed 4 or 5 and watch it very carefully as chicken meat is soft and you could end up with mush very quickly so maybe wizz for three seconds or maybe just turbo and check after each go. Good luck, maybe someone who has done it and took notice of the times and speeds will come on .

Welcome to the forum Mia.I suggest small pieces of chicken chopped for 30seconds speed 4.Check for consistency and is needed process same speed but for a few seconds more.

Mia, if you are in the UK, there are mincing instructions in your Fast & Easy Cooking book on page 118 or if later editions are different, in the Meat & Poultry section after the index.
Welcome to the forum.

I do all my minced chicken in the thermomix. I haven't done beef mince yet though. Welcome Mia. How is your thermomix going?

People do have problems with the lid and seal retaining odours Mia.Try scrubbing it with a paste of bicarbonate of soda and vinegar, wash it in detergent dry and place it in the freezer for an hour. Its best if you leave the lid off the jug when not in use.
This posting is good to read
Smelly Lid.

Lids should not be put back onto the bowl after cooking and washing either Mia. I just sit mine on top, never locked into place nor do I cover the hole with the MC. Let everything air and breathe. Some suggest leaving the seal out in the sun to remove smells, it's worth trying everything.

Mia I'm not sure you should soak the seal in vinegar all night again it is an acid. Sometimes mine get a smell but it goes away after a while .
