Quick & Easy Scones

Hello, my first recipe based on "4 Ingredients" by Rachel and Kim.  These ladies are amazing, I have the book on my phone, so don't have their surnames.  Check them on the web - www.4ingredients.com.au.

Had drop in visitors so had to make do with what was in the pantry.

3.5 cups self raising flour
250ml tetra pack of thickened cream (the real recipe calls for 330ml of cream but uses 4.5 cups of flour so it seemed to work)
300ml bottle of lemonade

Flour, cream and lemonade into the TM bowl and mix for about 1 minute on interval speed, then put onto a floured surface, roll out to about 3 cm thinkness and cut with a scone cutter. Place close together on a paper lined baking tray and bake in 220 degree preheated oven for about 12-15 minutes.  Makes about 10 or 12

It was quick and easy - still loving my baby!

Well done doing this one as I have had this on my list of recipes to convert  ;) - I always made the lemonade version pre TM and they turned out without fail every time.  yay -now I don't have to do the wing-it trial.  Thanks ;D
The 4 Ingredients authors names are Kim McCosker & Rachael Bermingham.  They have two books (first one is green cover, number two is red).  Yes they are good, quick, simple recipes and you've inspired me to go through them again and check out some more ideas!

Thanks eccles2 - used to use lemonade (for overseas visitors think Sprite - sweet carbonated soft drink - not lemon juice drink) to make scones, used to use buttermilk too, but then haven't made many lately.

I use 3 c flour, 1 c cream, 1 c lemonade - easy to remember.

I'm suprised that TMX isn't too rough for the scones as they need to be mixed very lightly.

Uni, is this the scone recipe you used recently? How many secs in TMX? I always over mix it.

courton, i set the for 1 min but only  mix for about 45 sec, i make sure that i pour the cream and  lemonade over the flour evenly

Uni, what do you mean by pouring cream and lemonade evenly...do you pour it when the TMX is turned on and with the flour in jug?

Never....my only other attempt was nay nay's scones which turned out doughy...my fault of over mixing in TMX I think.
