Sat up in bed until midnight, surrounded by all my books and folders - couldn't come up with anything to cook for the next 2 days so gave it away until this morning.  Within 5 minutes I had my recipes ???  Maybe recipe planning is a job for the morning not late at night.

Today - Tuna corn casserole (Trudy gave me her favourite non-TMX recipe but I'm going to give preparations a go in the TMX)
Tuesday - Moussaka & salad

Monday - bulk cooked curry, rice, steamed veg, yoghurt (TM for curry prep)
Tuesday - home late - slow cooker mexe bake, salad, mountain bread chips (TM for mexe beans)
Wednesday - home late - mashed potato (TM), boiled eggs (TM), salad
Thursday - home late - pasta & basic tomato sauce (TM)
Friday - stirfry (TM), rice, omelette (TM)
Saturday - homemade pizzas (TM bases and sauce)
Sunday - roast vegies, salad or steamed greens, white sauce or gravy (TM)

Other cooking and baking - in the Thermomix - rice & almond milk, mayonnaise. Picnic lunch and snacks for Wednesday and Saturday. In the very least! ;)

Monday -
lunch: Corned beef, potatoes, sweet potatoes, carrots, broccoli and peas with dairy-free white sauce (TMX)
dinner: Hush puppies made with leftovers, with leftover white sauce

Tuesday -
lunch: Fried rice (using leftover rice from breakfast)
dinner: Tuna noodle casserole (TMX) x 2, and salad + steamed dim sims (TMX Varoma)

Wednesday -
(Out all day - dinner prepared ahead for family)
lunch: leftover fried rice, dim sims, salad
dinner: Tuna noodle casserole

Thursday -
lunch: Chicken & spelt salad (TMX), vege sticks.
dinner: (home late) Crockpot creole bean soup.

Friday -
lunch: Leftover soup and spelt rolls
dinner: Homemade canneloni (TMX)

Saturday -
lunch: (out all morning) Crockpot baked potatoes & salad
dinner: friend's place for dinner

Sunday -
lunch: (church) Crockpot roast beef & veges
dinner: leftovers

Now I know another reason why I can only do a 2 day meal planner - if I cook the full recipe quota, it lasts us 2 or 3 meals.  Don't I have it easy compared to some of you. ;) ;) ;)

I was wondering if anyone would comment on that!!!  :D They are cornbread made with no oil/butter so the batter is thick, then shallow fried in small blobs like patties.  I add my leftover chopped up corned beef and veges, and we eat them with white sauce - yum!  I think the traditional hush puppies are just the cornbread, once you add meat/veges they're cornbread fritters, my mum tells me. (My parents are from Texas, this is a southern American thing which I grew up with!)  :)
