Preheat oven to
180oC (160 fan forced)Line 2 baking trays.
125g softened butter
35 brown brown sugar
1 egg
280g S R flour
1 small mashed ripe banana
80g chocolate chips plus extra for the tops
Mix the butter and sugar for
4 mins/speed 3. Scrape down sides, add the egg and mix to combine
5 sec/speed 3.Stir in the flour, banana and choc chips
30 sec/reverse/speed 3.Drop level tablespoons of the mixture onto the trays 3cm apart. Push an extra choc chip onto the top.
Bake
22 mins, place the trays in the top part of the oven and swap them halfway through the cooking.They should be golden and firm to the touch. Allow to cool on the trays then store them in an airtight container - a tin one is best. They will stay crisp long enough for them to all disappear - mine lasted 9 days.
The banana flavour really hits you on the second day.
