Having to make apricot verjuice reduction for tomorrow's recipe. It is a sort of take on Maggie Beers recipe.

Verjuice, dried apricots, lemon juice and zest some sugar then cook away in the Thermomix.

This was taken from a book called "Heavenly Fragrance" by Carol Selva Rajah . .
Grilled Quail with Lemongrass and Ginger (except I baked it in the oven  -which was an option given in the book . . ;D)

The marinade: oil, lemon grass, garlic, spring onions, ground red pepper, fish sauce, salt, Chinese 5 spice powder, soy and sugar.
Basted with garlic oil made from garlic, oil and ginger
Garnished with Vietnamese Mint, chilli with lime wedges
Served with dipping sauce: hoisin sauce, soy sauce and Chinese black vinegar

You clever folks. The quail look good. Our version was Jamie's Roast Chicken with cous cous. We all enjoyed it. The cous cous being cooked in the juices of the chicken made it very tasty. I added to the veggies.



The cous cous is hidden under the veggies and chicken.

Thanks, Judy . . yes, but some years ago now. They're a bit fiddly to eat with those tiny bones.   When I was looking for these I noticed some places advertised quail fillets which would have been interesting.
