Uni's Lactose free evaporated milk
« on: July 02, 2014, 02:33:37 am »
Doing some work in the soup thread I came across this recipe from Uni so decided to add it here.

Lactose free Evaporated Milk for Recipes

Makes 1½ cups of Evaporated Milk
Directions: Put 3 cups of soy or rice milk in a saucepan. Cook over medium-low heat, stirring constantly, until the volume is reduced to 1 & 1/2 cups

Thanks Uni.

Oh no .... I saw a delicious recipe SOMEWHERE just yesterday that needed evaporated milk so I didn't save it ... and now I cannot remember where I found it.  I am sure it was on a blog that I do not normally visit so I stand no chance of ever finding it.  I will give Google a go and see if I have any luck ... fingers crossed!

Shock ... horror ... I actually found it, and it turned out to be condensed milk the recipe called for.  Ah well, I think I have a lactose free recipe lurking somewhere for that so that is fine, and I now have a lactose free evaporated milk recipe as well so all is good.

Cuilidh was that recipe for the condensed milk cheesecake?
I cannot find it any where not even with using google and thermomix!
If you can post the link for condensed milk cheesecake on the forum that would be great.
I saw it in the last few days but can't find it again!
Thanks

It wasn't a condensed milk cheesecake, BTBT, it was a lemony blueberry slice, but it could possibly be adapted to a cheesecake ... here's the link - have a look and see if it would work.  The consistency certainly looks right.
