Melty Mushroom Wellingtons from BBC Good Food website
Made these for tonight's supper.A bit fiddlly to make but very tasty.I did chill the Wellingtons for a few hours before I cooked them.Only took 30 minutes in my fan oven.
My bag of baby spinach only weighed 240g and it was ample. I used Stilton but I would think cheddar would be good too. I would season a bit more next time.
Do drain the spinach well

Thanks Judy. CC these are really tasty. I used cheddar with ours.
May all dairy items in your fridge be of questionable vintage.
