1 litre of yoghurt made with UHT milk , in TMX.

2 litres of yoghurt is too much for us,  so looked for ideas to make 1 litre.  This is what I did,  easy.

1/2 cup of yoghurt,  didn't say pot set  but did contain lots of good bacteria.
1 litre of UHT milk, fresh would be ok.
 Electric yoghurt maker,  but could use small Thermoserver or wide mouth Thermos.

Process
Switch on electric yoghurt maker
Pour hot water into container that is to take the mix. ( to warm it)
Pour 1 litre of milk into TMX bowl and heat to 37 degrees, speed 2
When 37 light stop flicking, stop machine and add 1/2 cup of bought yoghurt.
Mix for 30 seconds, speed 1.
Check to see that the added yoghurt has mixed through.
Empty out warm water from container add pour in mixture
Place in Electric machine and set for 10 hours.  ( i do this over night)
I place a tea towel on top to keep the heat in. 

This made a light set yoghurt.
Can add powdered milk to make a thicker set but I don't like the taste

I have strained some and expected it to be quite sharp.  As this was what the original starter was.  But after straining it is very creamy and almost sweet.  Instead of making a savoury dip/ spread think I might add strawberries to it for Dessert.

Looks great chookie.
2 litres is becoming a lot for us too. I don't have the machine but made up 1 litre yesterday using a recipe on the thermo fun blog. Basically just tweaked times, but same process as Helene's recipe. Worked well.

Good Kimmyh.  I read Helene's Blog also but wasn't confident to adjust times etc.  was also concerned how the UHT milk would behave as I had read that it can produce a very thin yoghurt.

Thanks for the recipe chookie, I've got an electric yoghurt maker but never had much success with it. Will try your recipe later in the week.

I don't have a lot of success with yoghurt. I may give this a try.

I make yogurt all the time and I use Alyce's method of heating for 60 mins on 90 degrees then proceeding as normal. If I remember I add 3 drops of calcium chloride. I was given an electric yogurt maker, which I really like. If I make 1 litre I use that, if I make 2 litres I use a home made wonder box. It is like 2 bean bags that the thermo server sits in. The yogurt is always very thick and creamy. I use Green Livings Greek yogurt culture and also add their probiotic culture to the mix.

The UHT milk also seems to benefit from a longer heating. It is never quite as thick as the fresh milk. I think one of the most important things with making yogurt is maintaining the incubation temperature. I have also made the UHT method of warming the milk in the packet sitting in warm water in the sink. Then incubating in the yogurt maker. Not as thick, but ok for when we are caravaning.

Made this earlier in the week and strained it yesterday for a few hours lovely and creamy, thanks for sharing your method chookie, just need to remember to save some for the next batch.

Jen,  glad you enjoyed it.  I have made 2 lots this week and we are eating it instead of cream.
