Boiled Carrot Loaf with photo

BOILED CARROT LOAF
Converted from an AWW recipe book

1 Large carrot (approx 140g) roughly chopped
150g Sultanas
150g Water
110g Caster Sugar
30g Butter
1/2 Teaspoon each of Cinnamon & Nutmeg
110g Self Raising Flour
110g Plain Flour
1/2 Teaspoon Bicarb Soda
50g Chopped Walnuts - I used Pecans

Preparation

Grease and line a loaf tin
Place carrot in TM bowl and chop 5 seconds, speed 5.
Add water, caster sugar, butter, sultanas and spices.  Set dial 90 deg  10 mins speed 1reverse.
Set aside and allow to cool for about 1 hour.
Add flour, bicarb soda and nuts.   Mix for 5 secs speed 1 reverse.
Pour into prepared loaf tin and bake in preheated oven 180deg for about 1 hour.  Stand for 5 mins before turning out onto a wire rack to cool.  Can be served buttered.

This looks fantastic, thanks. I love carrot cakes in all forms. I will make this for the car club meeting at our place this weekend.
May all dairy items in your fridge be of questionable vintage.

It does look lovely and not a lot of oil like my usual carrot cake.
