Lemon Bliss Balls

I have had a quick look and can't see a recipe the same,  so am posting.  If already posted please remove.  Friend with the 4 year old who made the Belgium Lemon tea Cake gave me this recipe.

Weigh into TMX bowl,
1 cup of cashew nuts
1 cup of coconut
Zest of 2 lemons, juice of one lemon
2 tablespoons of Maple Syrup or liquid sweetener of choice.
1 teaspoon Vanilla.

Mix on speed 7 until it all comes together. Watch through hole in lid.
Roll into balls and then into extra coconut.
I used a small 3 cm ice cream scoop.
Store in fridge or freeze.

These would be so easy to wizz up when someone arrives. I can see me making them frequently.
May all dairy items in your fridge be of questionable vintage.

Kimmyh,  I have just made some with walnuts and coffee.  Rolled in Cocoa.
like you I have been really enjoying these balls. I have even made some protein powder to add to the mixture. They have to be healthy!!!

Made them today chookie and they are delicious. Thank you. I peeled my lemons with a veggie peeler and blitz the rind a few times, then added the rest. Very quick to make. I've been making white ones (vanilla balls) and raspberry balls from the Wholefood Simply book lately. These are as good as those.

At 20 to 11 tonight I decided to make these, how quick are they to whip up Cookie.  My Mum will love these, she adores anything lemony.

Judy,  glad you like them. 
Kimmyh, as I use Meyer lemons I sometimes use 3. I use a little zester that makes thin fine strips.

Chookie, these look lovely and are now on my list of things still to make for Christmas.
Did you use Raw cashews? Anyone else that gas made them can let me know also.  ;)
