I do have a Yo Yo Recipe without Custard Powder - just not converted yet. It's on my list...
But if you'd like to convert and perhaps post back on the forum..??
175g butter softened
1/4 cup icing sugar
1 teaspoon vanilla extract
1 cup plain (all purpose) flour, sifted
1/4 cup cornflour, sifted
Filling
60g butter, softened
1 cup icing sugar
2 teaspoons lemon juice
2 teaspoons finely grated lemon rind.
Preheat oven to 180C (perhaps 160 for fan-forced??). Place the butter, icing sugar and vanilla in a bowl and beat with electric beaters until light and fluffy. Stir in the flour and cornflour until combined.
Place the mixture into a piping bag fitted with a fluted nozzle. Pipe 3cm rounds onto a baking tray lined with non-stick baking paper, allowing room for spreading. Cook for 12-14 mins or until golden. Cool on trays.
To make the filling, place icing sugar, lemon rind into bowl and pulverise for 10 seconds on speed 10. Add butter and lemon juice and rind in a bowl and beat speed 4
until fluffy and creamy. Pipe onto half the biscuits and sandwich with the remaining biscuits.
Makes 16 filled biscuits.
