Ingredients                           
250g of organic butter or
1x batch TM31 Butter (Australian Cookbook)
1 Curry Leaf (optional - only for savoury cooking)

Method                              
Add butter to Thermomix Bowl. Cook for 60 minutes at Varoma temperature, speed soft.
Check for a clear golden liquid with milk solids coagulated and clumped together on the top and at the bottom.

Add a curry leaf in the last minute of cooking. Leave to cool, then strain by tipping into a sieve lined with 2 sheets of chlorine free paper towel. Store in sterilized jar. Can be used for all cooking, replacing oils and butter.

Tips/Notes
·   Does not need refrigeration
·   Ghee is lactose free, suitable for people with milk allergies
·   Often used in Indian cooking
·   Rich in CLA Conjugated Linoleic Acid known for many health benefits – two to mention here are slowing heart disease and assisting in improving lean muscle to fat ratio, also stabilizing insulin.

NOTE:  traditionally cooked at 250F/121.1C

Sounds good ILB, but just to check, is that right that you cook it for one hour?

I tried to find some ghee in the supermarket the other week.  Where would you find it, seeing as it doesn't need refrigeration? Mind you, our Foodland is b....y hopeless with their stocks, couldn't even get a can of water chestnuts either.

Judy, Ghee is in the section where they sell curry pastes.  At least that is where it is in Woolies at TTP.

Judy don't panic if you can't get it.  Wayne and I spend lots of time in India and all our friends don't use it anymore except in sweets as it's not that good for you.  We have friends here who always use it but really you don't have to, I don't, I somtimes use mustard oil ( but if you use this only buy small quantities as it goes rancid ) as I love the taste.

I can't even remember what I wanted it for Trudy :-)) :-)) :-))  I do remember now though, seeing those green tins somewhere in the supermarket, thanks Thermomixer.  Must spend a bit of time talking about your trips to India on the 2nd Trudy.

I use it as a lactose free "butter".

Judy - I think those chocolate cigars from Master Chef called for Ghee.

Thermomixer - I'm not sure about that 60C vs Varoma?? JB passed the recipe on, so I'll quiz her next time we speak.

Yes ILB, that's what I wanted it for, thanks for reminding me - they are still in the freezer so must take a couple out and see how they cook up.  I just used ordinary butter on them.  My freezers are too full again at the moment & I need to do another inventory.

So is mine - but mostly lamb LOL. EX had a few sheep done and sent one to me (although the meat has more of a mutton flavour smell  :P :-[  and has turned me off using it) and at the same time Mum and Dad did the same!  Miss 3 and I just don't eat that much lamb/meat. So I'm looking now at mincing and slow cooking as much as I can.

I love lamb but it is so much more expensive than anything else so we rarely have it.  It is a real treat in this house to have a lamb chop.  You will certainly have to get creative and busy to get through that lot ILB - invite the BB staff around for some BBQ's and TMX salads when the warmer weather arrives.  Is it safe to accept gifts from XH's ??? ??? ???

Maybe not - perhaps that explains that strange flavour & smell  :o :o
He accidentally let it slip that he was getting a few of "our" sheep done for himself and his family - so he was caught out and sent one my way... I only "found out" a few days before it was ready to pick up  :-))
