I add a bit more stock or broth and process the remaining risotto at a high speed until the individual rice grains have been mushed and the result is a thick, creamy "gravy" or sauce that is wonderful over steamed vegetables, chicken and most recently, pork chops. 
Once I even ladled some over a serving of rice pilaf that was a bit too dry.  I was alone, so no one around to witness my "rice on rice" shame! ;D

Rice on rice! Well I use my rice to make ice-cream, its delicious! Ok Ok so its not risotto! but rice pudding, but hey still using up leftovers! Good thread! Using up leftovers! I hate waste!

No worries Chelsea, it will be my pleasure.  Thanks for trying it.  So many people say they don't like canned tuna but you can do so many wonderful things with it.  I never eat it with a salad like I would with canned salmon but in a casserole or pie it is a cheap and healthy ingredient.  :-* :-*

I am the same JD. I can't eat it unless it is cooked in something and well disguised.  I persist though because it is cheap and on hand when I forget to thaw meat out.  :-))

Rice on rice! Well I use my rice to make ice-cream, its delicious! Ok Ok so its not risotto! but rice pudding, but hey still using up leftovers! Good thread! Using up leftovers! I hate waste!


If a sweet pudding made with the same type of rice as risotto, wouldn't that be a sweet risotto?  And couldn't it be the basis of other sweet concoctions if the speed is increased to 5 (where I process the savory risotto) with fruits, fruit juices and etc.?

Why not get a spoonful, make it into a ball and put a 1cm cube of mozzarella inside them.  Then you can crumb them and put them in the freezer for another day.  

Deep fry straight from the freezer and serve with a good Italian sauce (tomato based)

The last time I had left over risotto - I stuffed tomatoes with it. - Greek style (I think)  ;)
