This is one of my favorite snack which my mom always used to prepare..
Posting a recipe for the first time, so plz bear with me
2 cups very small white sago
1 large boiled potato mashed
1/2 cup roasted peanuts
1 inch ginger
2 green chilli
1 tsp cumin seeds
salt to taste
Oil to fry
3-4 curry leaves finely chopped
3-4 sprigs of corainder finely chopped
Place sago in a bowl and fill water just enough to submerge it (dont put excess water else it will get too sticky), close with a lid and keep aside for 30-45mins. In the meanwhile grind the ginger and green chilli to a fine paste. In a blender/TM coarsely grind the peanuts, make sure there are few chunky bits, this makes it more tasty..
After the sago absorbs all the water, in a bowl mix well sago, mashed potato, peanuts, ginger, chilly, curry leaves, coriander, cumin seeds and salt. The mixture should be a nice thick one with which you can form patties.
In a pan of oil, deep fry these patties just until they are golden brown, takes around 4-5 mins..
They should be crispy on the outside but a little gooey on the inside..
Serve as it is or with tomato ketchup and enjoy!!!

NOTES: Please make sure there is enough potato in the mixture as they tend to pop when fried.. so please be careful..
You can have some variations adding chopped onion, I personally dont prefer onion in these..
