Recipe Review Coconut Lime Chicken AA

Low Carb book page 50.

Made this for dinner tonight. Got the thumbs up from the whole family. I served the chicken on top of Cos lettuce leaves along with a side of steamed rice (I know defeats the low carb LOL).

The only change I made was to only use half the dressing - I think to use the whole lot would make it way too soggy for our tastes.

It was very nice. I have frozen half of the dressing and made a note in the book for when I next make it - will make a very quick meal next time.

It has come in handy having two thermomixes - whilst I was doing the chicken in one, I made the rice in the second. Certainly helping me get my Thermomix mojo back.
