Ok - misread aaaaaagain - you leave the dough to rest 10 - 20 - 30 minutes !!!
BEFORE you put it in the press !!

In my enthusiasm I may not have worded it clearly enough. I know what I mean but sometimes it comes out different.
Basically add all ingredients into bowl, knead for a few mins, then leave to sit for 30 mins.
Divide dough into 8 pieces, roll each into a small ball with your hands, then one at a time, place in press, drop top part down, and press for a couple of seconds, then lift off and repeat with the rest.

ok here is my first question for the forum
and its a really embarrassing one
I want to make these tomorrow, but Do you fry the tortillas before using them in the baked enchilada recipe, or use them uncooked? I am sure its means to fry them .... but worried they will go too crunchy to roll them properly so wanted to double check in case I have misunderstood

Hi Ruth, not an embarassing question at all, I'm glad you asked.
I did gently fry them, but like you say if you do it too much they will harden. I also kept mine under a tea towel as I did them, less likely to dry out that way too. Good luck, hope you enjoy it.

Placing your tortillas on a plate in a plastic bag as you make them is a great way to keep them soft (a Quirky Jo tip
).

I made these tonight. I have never made an enchilada before (I might not have even ever eaten one before

I've been a little slack in posting but this was the first 'meal' (after the obligatory custard and sorbet of course) that I made and we were throroughly impressed, it was absolutely delicious!
Being a novice, I was a little too concerned with breaking the mince up (lesson learned) so it was a little fine, and my tortillas looked a little dodgy, but once it was all put together you couldn't notice that at all. I also think that the home-made tortillas made all the difference, and am going to invest in a tortilla press - I never knew such a thing existed - thanks JulieO! (Actually, it was your enthusiasm and photos that convinced me I needed a thermomix in the first place - without having laid eyes on one - so thanks for everything!)
