hopefulcook I don't think you need to buy a special pan, for the time being just use the flattest pan you have. some of the worlds best food comes from the humblest kitchens.

What, to bash the ball of dough with CP  ;) ;)

I made these tonight with chicken and they were heavenly. I followed JulieO's directions up to where the passata is added and it is cooked for 9 minutes.  I then transferred a third of the sauce into a jug (for the topping) and added 500g of diced chicken thighs to the remainder of the sauce in the TM.  I cooked that for 6 minutes, 100 degrees, reverse speed 1 and then proceeded on with the recipe (making up the enchiladas and baking them etc).  I think we loved the chicken even more than the beef and it was cooked to perfection.  Such a yummy recipe Julie.  ;D

Made this for dinner tonight, my tweak for vegetarian version - using Sanitarium Casserole Mince, a handful of sliced mushroom, 125g canned corn and 125g canned red kidney bean.  Yum...

I found this recipe on my robogourmet app and it is pretty much identical except that it has 300g beef mince and 400g kidney.  It doesn't mention the kidney beans in the instructions though, so I just wondered if anyone could enlighten me as to when to add them?  I'm not sure whether to cook to them as part of the enchilada sauce.

I'd add them in with the enchilada sauce that gets added to the mince mixture rostess.

I had to bump this one as we had them tonight and they were FANTASTIC!!! Who would go to a restaurant when you can make this at home???

Just love this dish, I first made this a month ago and it went down well, the kids wanted to try it with chicken, well just as lovely and  good to

know I can have it either way and know it will be eaten. DD liked the chicken best but she is not really a meat lover, DS liked both but then

again he will eat anything   ;D

I cooked these the other night. Ultra delicious!!!! Thumbs up all around.

I made my own wraps as well. I'm amazed at what I am actually attempting to do!

I had quite a bit of meat left over (as my wraps dwindled in number due to DS1 eating some of them). Freezed the leftover mixture and will use it a sort of nacho style dish.

Tortillas, are they hard to make?  Do they need to be fried? Can you put them in the oven?

Here's Trudy Olive's recipe Halex. I will post it in it's own thread I think as it is hidden somewhere.

This is one by Trudy Olive

320g plain flour
1teaspn salt
3 tblspns olive oil
1 tspn baking powder
180g warm water
Place everything into the bowl.
Mix 10 seconds on speed 7 to combine.
Set to locked position and knead for 3 mins.
Put dough onto breadmat and rest 5-10 mins.
Divide dough into 12 pieces and roll each piece into a flat round.
Fry in an oiled hot frying pan until they start to brown.  Turn them over and cook the other side.
OK to freeze.
Also great for making tortilla chips in the oven with any leftovers.

Halex, I've tried making the tortillas a number of times but they never really worked for me. Not sure what I was doing wrong. I think  I was following instructions from jo which she has posted on her blog - they looked and sounded so easy in the picture, but just not something I was able to master.

I am not good at frying, would you just use spray oil?

Are tortillas similar to CCs & doritos. DS loves these, woud be great to make some.

Wonder, the recipe JD has posted seems pretty easy.
