Chilli Jam, Sarah Raven.

Sarah Raven  is a wonderful gardener who is often featured in the British edition of Country Living.  She is also a very good cook and because she provides recipes, usually based on produce from her garden, I follow her with great interest. This chilli jam recipe is part of a recipe for Spiced grilled Halloumi in Pitta bread with spring herbs and Chilli jam.
I have adapted the recipe to TMX and used good quality tinned tomatoes instead of fresh.
It is a very simple recipe and easily adapted to the amount of chilli.
Makes 3to 4 medium size jars or several smaller jars.
Ingredients
3 tins ( 400 g )of diced Italian Tomatoes
8 cloves of garlic
4, 6 or 8 long red chillies depending on how hot you like it. I used 4 and it has flavour with a very mild kick. I removed the seeds.  Next time I will try 5.
12 cm piece of fresh ginger root sliced.
600 Mls  of raw sugar, could use less.
4 tablespoons of Thai fish sauce.
200 mls apple cider vinegar.

Process
Grind ginger, chillies and garlic on speed 7 for 3 seconds or until chopped but not paste.
Add all other ingredients and cook, 100 / speed 2 / 40 minutes,  with cup OUT.
Pour into sterile jars and seal when cold.
When opened store in fridge.

Notes
Nice poured over Philly cheese as a dip.
Could be added to tomato based dishes as a flavour boost.
Could add a swirl to characterless soup .

Did you use Australian 20ml Tablespoons or our 15ml Tablespoons measurement in the recipe?

I haven't made anyting from Sarah Raven.I have been lucky enough to be given some seedlings ( Cosmos)  from seed from Sarah.

I made this yesterday, it is fantastic. ;)
3 huge bottles,

About 1 hour after this was made, we had  3 lots of friends drop in   (16 people, ( not expected at all)

Poured some warm jam over philly and everyone loved it.

will make some more, as I have just been promised some more chillys.

I sort of used this and another recipe the other day, but I was going to use white vinegar (as per the other recipe). Got to this step, and accidentally grabbed the miracle spray, which I also have in a vinegar bottle. One whiff of the mixture and I realised my mistake. I had to start again. Turned out I went a little mad with the chilli, so I need to adjust that next time.
