Mich made the suggestion that we should have a challenge involving our mini square cake tins. I checked with Denise and Judy and we think it's a great idea.
Our challenge is to make something ( anything) in the mini square or mini rectangle tins. I'll put a photograph of both up at the end. It can be sweet or savoury or even in between.
If you are going "phew I don't have them," then you still can't escape. Your challenge is to make something that could be made in either of these tins. Which is basically anything.
Please post your results here and if it's a new thermomix recipe please post that too. One of the moderators will copy the recipe to the appropriate section. Or if you are really wonderful you could post it here AND in the appropriate section. ( you get a hug for that extra effort).

Thanks for the idea Michele and you cookie for starting the challenge. It will be interesting to see what you all come up with.
I've been living out of the freezer for the past 3 weeks but I still have at least 2 week's supply of food I'd like to use up before adding anymore meals so I may or may not join in on this one unless it goes on for a few weeks. However, you never know - this thread may inspire me so much that I'll get my mojo for cooking back and want to join in sooner.

I have both sorts of tins, so no excuse not to join in.
I've been hibernating a bit the last few weeks and not cooking much other than quick dinners, so maybe the challenge might inspire me to bake something.

Pistachio and Lemon Loaf
250g unsalted butter, room temperature
250g golden caster sugar (see note below)
4 large eggs, whisked
Zest of one large lemon
Seeds from one vanilla pod
120g pistachios, ground
100g almonds, ground
40g plain flour
Favourite lemon icing or drizzle recipe and 60g of chopped pistachios for decoration.
Method:
* Preheat the oven to 150 degrees and prepare pan.
* Beat the butter and sugar sp3 for 3-4 minutes until light and creamy.
* Gradually add the eggs into the mixture until combined, then add the vanilla and lemon zest.
* Add in the ground nuts and flour to mixture mix sp 5 for 40 secs.
* Divide mixture and place in oven. For 2 9cm x 18cm pans the time guide was 35 -40 mins. (see note below)
* When baked, remove from the oven and leave in the tins for about five minutes before removing.
* Ice when cooled.
NOTE 1: I couldn't find golden caster sugar, apparently it's very popular in the UK. When I googled, it is a raw caster sugar with a buttery flavour. I used raw sugar and processed in TMX.
NOTE2: My oven is on a go slow today. I set it at 160 degrees and it still took 35 minutes to cook mini loaves.
This recipe was found on The Little Loaf blog and she used a syrup to drizzle over the loaves.

Great idea ladies; I sometimes need a challenge like this to make me do something. Have to cook for a sewing afternoon tea tomorrow so will make the little cakes I use in the rectangle one. Will try to post a photo but if not I might send it to you Cookie to make magic.

Great idea but I'm confused about what you said cookie (not hard to do these days). I don't have these tins, so how do I make something that "could go into these tins"?

Sorry Kimmy. I can be a bit obtuse at times. Your challenge.......should you decide to accept it.
Is to make anything at all that could be cooked in this type of tin, but you will bake it in whatever you have. For example I think a muffin would go in these tins as well as muffin tins. Tonight I made small quiches in my square tins, if I didn't have the tins they could be made in a round tin.
I hope this is a little clearer. ( I fear maybe not though)

Yes that's quite clear cookie. Good on you Michele for firstly the idea of the challenge and then to be the first to come up with a recipe. It will be interesting to see if sweet recipes greatly outnumber savoury ones - my bet is yes.

I had a container of spag bol sauce out for tea tonight, I knew there was a large fresh lasagne sheet in the fridge so, because it was so easy I've done my first meal for this challenge. All I needed to do was make a batch of EDC bechamel sauce and I ended up with 4 individual lasagnes in my 7 x 11cm mini loaf tin. I also had the garlic bread in the freezer. Only problem is that I won't be able to refreeze them but that's not a problem. I'll eat them over the next few days then won't have lasagne again for a year or two

Thanks Denise. I rarely have lasagne and I really enjoyed it. The serve is big enough for me but a male would need 2 of them. Baked 180
o
for 25 minutes and used cake release to grease the tin.
