Introduce yourself by Therese

Hi my name is Therese and I aam from Albury NSW Australia. I am a teacher and very time poor so the thermomix has been the saviour to boring evening meals. BTW my thermomix has been christened BERT as my friend has one also and she named hers ERNIE.

I am now trying to experiment more with it ans school holidays are the perfect time to do this. I have some wheat grain and spelt grain and want to make bread ... I have tried  couple of different ways but the bread comes out really dense (almost like a brick). Any suggestions? How do I make baker's  flour from scratch. When I mill the grains is the resulting flour plain flour?

Welcome to the forum Therese. I've found when I grind my own grain I only use about 100g of it in the bread. The rest of the flour I make up with Bakers' flour or Laucke Crusty White Bread mix. This way I have no need to add the sugar or salt to the bread.
Our bread guru is Chookie and she is away for a few days.

Try making this recipe of hers using about 100g of your own ground flour and the rest Bakers' flour. This can be bought at Coles or Woolies. ( or use the Laucke Bread Mix and leave out the sugar and salt)

Hello Therese, welcome to the forum.  Cookie has given you some good advice there, she's a pretty good bread maker too LOL.  Try the recipe she suggested, everyone has success with it.  Please do let us know how you get on.

Hi Theresa. Welcome to the forum

I'm the same with you with bread, always came out dense.

I had success,with the following

270g water
1tspn sugar (opt)
1 1/2 tsp yeast
460g flour
1 1/2 tsp salt
1 1/2 tsp bread imp (opt)
2 tsp vegetable/canola oil

Add to bowl in that order

Mix 15 seconds sp3

Knead 6 mins

Rest 15 mins

Punch down

Divide Into 8 rolls or shape as a loaf or place in bread tin  and let rise to double

Bake 180 degrees 15-20 mins for rolls
Or 25-30 mins for loaf

Hasn't failed me yet.

Have you managed to try any of the suggested breads Theresa?  If so how did they go? We'd love to hear that you had success.
