Kefir and Wasabi dip/Mayo/dressing
« on: August 11, 2015, 06:49:32 am »
Don't really know where to put this as it is Raw, Vegetarian, Gluten and added oil free.

Ingredients

200g Kefir or plain Greek yogurt
200g raw, roasted, unsalted Cashew nuts.
4 large Wasabi leaves cut into fine strips, ( could use the paste in tubes, 2 teaspoons or more according to taste.)
2 cloves of garlic, remove green shoot as this is bitter if uncooked.
2 teaspoons of Horseradish. I use home grow but shop bought ok.
2 teaspoons of hot mustard.
Salt and pepper to taste.

Method

Place all ingredients in TMX Bowl and mix on speed 10 until smooth and creamy.   This could take up to 5 minutes. Scrape down after each minute.

Notes
Good as a dip with carrot and celery sticks or fresh bread stick.
Use as Mayo to dress potato, rice or bean salad.
Nice with cold boiled eggs in a salad.
Use as a base cover on pizza instead of tomato.
Use instead of butter on savoury scones.

The amounts given are the minimum to blend efficiently.

My mob would really love this. My ingredients would be store bought though. I'm sure they wouldn't mind just to get the dip.
May all dairy items in your fridge be of questionable vintage.

I would love to grow wasabi or horseradish , what growing conditions do they require Chookie? Can you post a photo sometime, I have no idea what they look like.
Recipe looks perfect for me too

Wasabi and Horseradish love cold wet conditions . Horseradish will take over and is easy to grow.  I harvest it in Autum and scrub the roots with a brush . I peel what I can and then toss in TMX and grate . I then mix with vinegar and put into small containers and freeze. People without a TMX have great trouble grating because of the fumes.
Wasabi is very difficult to grow although it is being grown commercially in Tasssie.  I have 2 plants and keep them outside my back door so I can keep an eye on them. They were very expensive to buy.
I will take some photos.
