This is quick and easy as long as you remember to marinate the chicken.
Sweet Chilli and Ginger Glazed Chicken
Serves 4
Ingredients
1 tablespoon lemon juice
1/4 cup sweet chilli sauce
2 tablespoons kecap manis
2cm piece of ginger, peeled and grated
4 chicken breasts
1/3 cup plain flour
oil
Preparation
Place lemon juice, sweet chilli sauce, kecap manis, and ginger into bowl.
Give a quick wiz on speed 3 to mix.
Pour our onto chicken, turn chicken to coat.
Refrigerate for 3 hours.
Drain chicken, reserving the marinade.
Lightly coat the chicken in flour, shaking off excess.
Heat oil in a non stick pan and add chicken. Cook about 4 mins each side until almost cooked through.
Reduce heat to low and add reserved marinade.
Cover and simmer for 10 minutes, turning occasionally, or until sauce has thickened.
