Will have to have another look at Taste of Vegetarian - there have been some lovely dishes made from the book.

It looks a bit like hummus Denise, does it have a much different taste than a chickpea
based dip?
The feta gave it that distinct "feta" flavour so very different to hummus.

It actually turned out ok. I served it up to DH and said it was a veggie frittata. He didn't notice the absence of eggs.
You wouldn't know it was vegan.

I had an excess of zucchinis so made this Zucchini Cake from A Taste of Vegetarian.
