Fennel and Apple Salad

Name of Recipe: Fennel and Apple Salad
Number of People: 4
Ingredients:
30g pine nuts
200g fennel, in pieces
300g apple, in pieces
1 tbsp honey, eg acacia
4 tbsp sunflower oil
2 tbsp raspberry vinegar
pinch salt
c 10 leaves lemon balm, roughly chopped
3-4 leaves mint, roughly chopped
2 peaches, in small pieces

Preparation:
1.  Put pine nuts in bowl and chop 4 sec / 8.  Remove and reserve.

2.  Put all the ingredients except the peach and pine nuts into the bowl.  Chop 6 seconds / 3-4.  Place into a salad bowl.

3.  Scatter over the peach and chopped pine nuts. 

232 kcal (without the cheese)

Tips/Hints: You can also scatter over about 100g diced cheese or crumbled feta if you want the salad to be more substantial.

Very interesting combo Caroline - thanks.  I love fennel - think there is a fennel and apple soup here somewhere.
