This easy recipe produced a lovely quiche that DH and I enjoyed eating.The mild Lancashire cheese complimented the sweet leeks nicely.The only thing I would do next time would be to add an extra egg to the mixture to make it firmer.

Looking at the picture I can almost taste it. I am glad that you advised an extra egg. It is so useful to have the new books tested. I have just bought in the ingredients for the chicken and leek pie Page 54. It is one of my favourite combinations.

We had this for dinner tonight. I was in a rush, as usual, and didn't check back on here. It was very nice and tasty. CC is correct with it needing an extra egg. It was still lovely but not quite firm enough.
