Name of Recipe: Pear and Nut Salad
Number of People: 4
Ingredients:400g pear, peeled, cored and cut in quarters
2 tbsp lemon juice
50g water
2 tbsp pear juice
60g walnuts
half head of frilly lettuce (sorry, know that's not the technical term, but can't get my brain to function
Moderators please feel free to edit!) Can also use rocket or lambs lettuce.
2 tbsp white wine vinegar
3 tbsp walnut oil
quarter tsp salt
1 pinch pepper
250g camembert, in small pieces
Preparation:1. put pear into internal steamer and add lemon juice. Add the water to the tm bowl, then place the internal steamer in the bowl. Steam the pears for 3 min / 100oC / 1. Then remove the steaming basket.
2. The walnuts are added to the stock in the bowl. 1 min / 100oC / 1. Drain and reserve walnuts.
3. Tear up and divide out the lettuce among the 4 plates.
4. Add the vinegar, pear juice, oil, salt and pepper into the (now empty) bowl. 20 secs / speed 3. Pour over the lettuce, place the pear and nuts on top, then scatter over the camembert.

Members' commentsThermomixer - This is one of MrsT's favourite combos - pears, walnuts and soft cheese. I am a bit mean and would only allow her to use about 1 Tbsp of walnut oil mixed with grapeseed oil in this recipe. I LOVE walnut oil - but it is a bit exxy to use in large amounts.
maddy - well I made it tonight, to go with our chicken. Loved it! The flavours worked well, it was refreshing, and beats the ordinary salad combo's.
McMich - I have made the salad and it is wonderful. I didn't have my thermomix but did food processor and by hand.

Cookie - This recipe is delicious. It will be what I take when asked to bring a salad in future. We had a tin of fruit open so I just used juice from that.
