LOL - thanks for the amusing welcomes!  DIL's - mmm, they'll definitely need their own Wanda to satisfy my 4 boys needs - let alone living up to my expectations.  No, I won't be a horrible MIL, I hope - BUT my boys will naturally want their own BIMBO, oops, I meant BIMBY - after they start to love Wanda too.

About the Potato Rosti - I wasn't very impressed unfortunatley.  Youngest son Finn said they were nice, but he didn't ask for a 2nd serving.  My 9 y.o. Reef, didn't like it whatsoever!  They cooked exactly like pikelets do, but not enough taste & absorbed too much oil when cooked in frypan.  I think the recipe needs a good tweaking.  Nevertheless, the heaps of leftover rostis weren't thrown out  but frozen, not to be reheated & eaten in their current state, but to throw in with soups etc., as a thickener & instead of using potato.  I did this on the weekend when making a Lentil, Chickpea & Broad Bean Soup, as an experiment. 

Made a few things today - another Pizza Dough (using my own dough recipe, which I find foolproof), traditional icecream, berry milkshakes, strawberry milkshake & I've just finished consuming a rather delightful & delectable Scallop, Lemon & Spinach Risotto which I devised & adapted to Wanda about an hour ago.  I'm extremely pleased with it & now I better write down my method & ings., before I forget them.  I took a quick pic which I'll post here shortly, after I select one.    I'm slightly passionate about my cooking, and photograph virtually all my home cooking, much to my husband's bemusement.

Welcome to the forum - from another Tassie TMX fan.

There are some great suggestions for improving the Potato Rosti recipe in the tweaking section of the forum.  From memory I think JD has worked on improving it.

The risotto looks delish - good to find another food foto fanatic.

Yeah, the rosti times and speeds are WAY out - maybe 3 or 4 seconds on speed 5 results in a "suitable" texture for the potatoes

Hope your boys find Bimbys rathers than bimbos - will certainly keep them out of trouble.

Well Tassie gal, if I lived there I would be making raspberry everything. You re so lucky with the produce you have in beautiful Tasmania. I see mangoes growing bigger by the day here in Cairns so am looking forward to my first Mango Daiquiri of the season soon.

Hey Gretchen, mangos are wonderful & so versatile - but you're right, we are truly blessed.  I do a local market here & sell my handmade booties & headbands, and there is a lady growing & selling all her own produce etc.,  - I've known her for many years so I'll have to have a good chat to her on the weekend - here's her list of products which will show the true versatility of our local produce

    `LOL - 10 & 1/2 E - woa, one day I may make some fabric slippers for BIG Feet!

    Oh, I wasn't going to sell the jam at the market, maybe I'll just try & sell her a Wanda of her own (she may even be a closet Thermomixer, as I don't know how she does it!)  I'm wanting to make sweets & cakes for the market as well as my other crafts.

    hi tasbell - I'm in the North, you're in the South, aren't you??  I used to live down there, in Sandy Bay & Cremorne, but thas was quite a few years ago now (then to Sydney, back to Hobart, Brisbane, Melbourne, Sisters Beach Tasmania & now back in my birth town, Launceston, lol.  We're moving house in 3 weeks, but only several blocks away, extra close to city (2 min. walk to City, Aquatic Centre, etc. etc.)  Can't wait, but naturally lots of packing & unpacking ahead.  School holidays atm, & boys are already ratty so I expect the time will pass super quick & before we know it we'll be moved!

    Hey Cathryn when you are making fabric slippers for BIG feet can you let me know - my 16 yo DS has size 15 feet  :o :o :o keep threatening to bind them lol as we have huge problems buying any shoes
