"Make and Go" Soup

This is a quick and easy soup! No fiddly steps involved, no garlic peeling, no sauteeing, just a few basic ingredients and three simple steps and your soup is ready to go! Pack it in a Thermos to take out, or serve straight away for a quick meal at home.

INGREDIENTS

    300g sweet potato, unpeeled, cut into 3cm disks
    150g cauliflower cut into large florets
    700g liquid stock of choice (or water + stock paste or cubes)
    Salt and pepper to taste
    2 tbsp greek yoghurt or coconut cream

METHOD

    Add sweet potato and cauliflower to Thermomix : 10 sec, speed 5
    Add stock, salt and pepper : 100°, 15 min, speed 1
    Add yoghurt or cream : 30 sec, speed 9

I made this for lunch today.  So quick and easy and very tasty.

 This looks like a lovely quick soup which would lend itself to variations - addition of Tenina's umami paste, herbs, chillies, beans, lentils....... Leftover sad veges in the crisper....

Thanks all, yes it's a really easy/good one for all types of variations using what you have on hand. I usually make this once a week.  :D
