Lovely Eccles cakes Julie. Another thing I haven't made in ages. This is like a trip back to my childhood. Please please, no one make junket though ......ugh!
Your cake looks nice ES. I've never heard of Parkin cake, but the flavours are definitely something I would like.

ES, your cake sounds interesting.  Sounds like you had a busy day. Have saved the recipe, will have to try it.  :)

That's a nice Parkin ES.  I have a GS who loves anything with ginger in it, he would be in 7th heaven with this.

I'm loving all the entries and thought going into the competition. :) Well done boo on posting your first photo. 8) The cookbook is really lovely and I'm sure who ever wins them will cook loads from it.

Cookie1 my DH has Dutch heritage so Appelmoes (Apple sauce) is eaten just as is by the spoonful especially for breakfast. I use it as savoury sauce with roast meats like pork or lamb. I mix it with yogurt and freeze it for icypoles. It is also good as a thickener for other sauces and I also put it into cakes etc just to replace some of the sugar and eggs. I also mix it with other fruits instead of sugar to make fruit crumbles. As you can see it is a staple in this house.
