Coconut Jam Drop Biscuits - Paleo
50 grams coconut sugar
330 grams almond meal (flour)
1 tbsp. coconut flour
1 large cold egg
70 grams ice water
¾ tsp. sea salt
45 grams ghee (or butter)
1 tsp. honey
Jam of choice (I prefer raspberry)
Pre heat oven to 180 degrees Celsius. (fan-forced)
Place sugar into mixing bowl and mill 15 seconds, speed 10.
Add ghee, almond meal, flour, egg, salt and honey and iced water and mix 25-30 seconds, speed 5.
Transfer onto pastry mat or board.
Roll into golf ball size rounds and place on tray.
Squash each roll with a melon baller or tsp., making indent in center of each round.
Place 1/ 2 tsp. jam in each indent.
Bake 10 mins, till just golden.
