Blueberry Doughnuts BakedMakes 12-18 depending on size.
Ingredients150g flour
1 teaspoon baking powder
30g cold butter
75g golden caster sugar
1/4 teaspoon salt
200ml buttermilk
1 teaspoon vanilla extract
1 egg
90g blueberries, preferably fresh, but frozen ok
Glazeicing sugar
lemon juice
PreparationHeat the oven to 180C and grease a doughnut baking tray.
Place the flour and butter into the bowl. Speed 4/5 until the mixture looks like bread crumbs.
Add the sugar and salt. Speed 3, 2 seconds.
Empty this mixture into a bowl and set aside.
No need to wash the bowl.
Add the buttermilk, vanilla and egg. Speed 4, about 10 seconds.
Pour this mixture into the flour mixture and using a balloon whisk stir everything together quickly. Its o k for it to be lumpy.
Fill each ring of the tin about ½ full and bake for 10-12 minutes. (mine needed a little more)
Repeat if you have mixture left.
When cool, mix icing sugar with lemon juice and drizzle over the doughnuts. I used a plastic bag with the corner cut off to drizzle mine.
