It really does work fine without the egg - in the original recipe it said the egg is optional. I have a friend whose daughter is gluten, dairy and egg free, and she tried it without the egg and said it was great! If you add banana it may stick to the pan a bit, unless you use a non-stick pan maybe.

We use banana or stewed apple as egg replacers often here, which got me thinking of yummy banana pancakes...

I love the way you use your TMX to mill grains in your cooking Jo. I have had many conversations with my TMX buddies here in Tassie about this and we all struggle to mill finely enough for most recipes. Would you be able to post a list one day (when you are finished moving perhaps
) of some of the things that you make using whole grains?

Okay, will try to do that soon. I think the secret to finely milled flour is keep your blades sharp by grinding ice, making sorbet, etc a couple of times a week. Also, with the blender batter method, you can use all wholegrains and it grinds up heaps at a time because it's grinding with the liquids. Then if you soak the batter overnight, and regrind in the morning it's even smoother. Here's another blender-batter baking recipe...

Just wondering if anyone can give me some advice. I am really (REALLY) wanting to get a batch of these started tonight in preparation for tomorrow's breakfast but don't have any cider vinegar. Is there anything that I could substitute? I'm thinking that the vinegar is there for soaking purposes and that lemon juice may work in the same way? Any ideas??

It is only a very small amount Chelsea so shouldn't make a lot of difference if you use white vinegar or lemon juice - it would if it was a cupful though and there are various suggestions on google about substitutions for larger quantities. I'd go with the lemon juice myself.

Yes, white vinegar or lemon juice is fine - it's just to kind of curdle the milk so it's like buttermilk. (The orignal recipe had buttermilk - I always substitute buttermilk with rice-almond milk + vinegar - 1 cup:1tsp.)

These were amazing - so light and fluffy!!! I can't believe they were made with brown rice. This recipe is definitely in my top 5 forum recipes.

I use and electric one, find it bit of a pain to clean - usually make everyone else clean it lol with the excuse that I cooked!!

I use a non-stick electric one, so I don't really have to clean it much at all. I just brush with a little oil while it's warming up.
