note: The original recipe says to try with peaches or pears but pears might need longer cooking.
I used peaches because the nectarines I got clung to their stones.

What a great idea agpest - nice one to impress guests.  Thanks for that, nice and simple one for our coming summer months.

I did not think about that you are just heading into the peach blossom season and while we are coming to the end of the peach harvest. Although the recipe book did say that steaming was a good way to bring out the flavor in not quite ripe fruit.

Not sure how I missed this one - great work over there - like the idea of the custard in the fruit.  Have to wait til next autumn (fall)

I tried this recipe today, a bit fiddly removing part of the nectarine to fill with the custard mixture but they taste lovely.  I made this recipe using some ready-to-eat and some too-firm-to-eat fruit and the firm ones held up best.  I preferred the taste of the completely chilled fruit to warm ones.

I used coconut cream powder to make up the small amount of coconut milk (38 g powder to 50 mls warm water then measuring out just 30 ml of this) for the coconut milk component as it wasn't worth opening a can for such a small amount.  I did have to add an additional 4 minutes to the steaming time but would increase the speed to 3 next time and it may be cooked in 10 minutes.

Something different, thanks agpest.
